Bloody roar has an awesome mechanic where it allows you to turn your character into an ANIMAL which gives you much more powerful skills
Tekken has awesome special fighting moves that if you get it right it will create very high damage on the opponent.
I also looked into the ps1 Dragon Ball Z game because it has awesome mechanics. It allows you to spell magic attacks as well as have Kah-Me-Ha-Me-Ha battles where both players conjure it at the same time.
Street fighter is very oldschool but still awesome with its in-between-games bonuses where you can break down cars and do cool combos.
Mortal Kombat is famous for its very well known mechanic of doing a Fatality, where you can kill your opponent in a very elaborated way. Doesnt really suggest any environmental solutions, its just brutal, but it looks pretty cool.
